Fadandel.dk is proud to present this special 12-year-old Ardmore (2nd Fill Palo Cortado) Single Malt Scotch Whisky, which, after more than a decade of maturation in cask, has received a long and gentle finish in a 2nd Fill Palo Cortado Quarter Cask for just over 25 months. The whisky has, of course, been bottled at natural cask strength, without chill filtration and without the addition of colouring – exactly as it came from the cask.
Ardmore Distillery was founded in 1898 in the heart of the Highlands and is known for its distinctive style, where classic Highland malt meets an elegant touch of peat smoke. This makes the distillery’s whisky particularly well suited to extended maturation and exciting cask experiments, while allowing the character of the spirit to continue to shine through.
This whisky was originally filled into a Refill Barrel back in 2013 and offered as Cask Share #017. After more than 11 years of maturation, the majority of the cask was bottled, but before the final bottling, we selected a portion of the whisky for further maturation in a 2nd Fill Palo Cortado Quarter Cask.
Palo Cortado is one of the rarest and most sought-after styles of sherry from Jerez in Spain. It combines the elegant, dry character of Amontillado with the depth and richness normally associated with Oloroso. For this very reason, Palo Cortado casks are particularly interesting for whisky, as they can add an extra layer of complexity without overpowering the original character of the spirit.
The Quarter Cask used for this finish already has an interesting history. It was first used for our 8-year-old Glenlossie, which spent approximately 2½ years in the cask when it was a 1st Fill Palo Cortado Quarter Cask. The cask was subsequently filled with this Ardmore, where, as a 2nd Fill cask, it has contributed a more restrained and harmonious sherry influence during the final 25 months of maturation.
The result is a unique Ardmore, combining more than 12 years of maturation with an unusually long finish in a rare sherry cask. Naturally, the number of bottles is strictly limited, and once the last bottles have been sold, this particular bottling will not be produced again.
